Three Cheese Chicken Quesadilla

Ingredients

  • 3.5 oz canned chicken breast (we used Kirkland)
  • 1 tbs light feta cheese (we used Trader Joe’s)
  • 1.5 tsp grated parmesan cheese
  • 1 low carb tortilla (approximately 50 calories – we used La Tortilla Factory)
  • 1/8 cup 2% reduced fat sharp cheddar
Heat a nonstick pan on medium heat. Lay out tortilla, and cover one half with all ingredients. Fold in half, place in your pan and cook until golden brown on both sides. Serve with salsa or just by itself! Enjoy!

The Green Goddess Smoothie Bowl

Green-Goddess-Smoothie-Bowl---Mighties-Kiwi

Ingredients

  • 1/2 frozen banana
  • 1-2 kiwis
  • 1-2 cups water or unsweetened nut milk
  • 1-2 handfuls of leafy green of your choice (I used baby spinach)
  • 1 squeeze lemon juice

Toppings – Try strawberries, blueberries, melon, mango, pineapple, coconut flakes, coconut shreds, hemp seeds, chia seeds, cacao nibs, etc!

Instructions

Mix everything together in a blender, adding the heavy ingredients first. Make sure you cover the ice and/or frozen banana with enough water to blend. Pour into a cup or bowl and top with your favorite healthy all natural toppings! Enjoy!
