Sinful Superfood Cookies

Makes 20 cookies

Ingredients

  • 1 cup oat flour
  • 1 cup protein powder (we used Trutein Cinnabun)
  • 1 egg
  • 1 cup mashed banana
  • 1/4 cup almond butter
  • 2 packets stevia extract
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/4 cup cacao nibs or mini chocolate chips
  • 1/2 cup flaked coconut
  • 2 Quest peanut butter cups, chopped

Preheat oven to 325 degrees and line a cookie sheet with parchment paper. In a medium bowl, mix oat flour, protein powder, stevia, salt and baking powder. In another medium bowl,  mix egg, banana, almond butter, and vanilla. Slowly add the dry ingredients into the wet ingredients and mix well. Fold in cacao nibs and coconut. Drop rounded tablespoons of your batter onto your prepared pan. Sprinkle with chopped peanut butter cups and bake for 10-12 minutes. Enjoy!
