Pumpkin Potato Soup

Ingredients

 

  • 8 red potatoes, cubed
  • 1/2 onion, chopped
  • 3 cups pumpkin puree
  • 2 cups unsweetened almond milk
  • 2 cups vegetable broth
  • 1 tsp garlic powder
  • salt and pepper, to taste

Instructions

  1. Place all ingredients in a crockpot and cook for 3-4 hours on high or until potatoes are soft
