Vegan Tacos
Serves: 2
Ingredients
- 1 yellow bell pepper, chopped
- 1 red bell pepper, chopped
- 1/2 yellow onion, chopped
- 1 tsp olive or avocado oil
- 1 tbs taco seasoning
- 1 tbs cilantro
- 4 corn tortillas
- optional: guacamole/avocado, cheese, tomato, salsa for topping!
Instructions
- In a medium non-stick pan, sautee bell pepper and onion in oil until cooked and golden.
- Add taco seasoning and cilantro and let cook for 2-3 more minutes.
- Place on warm corn tortillas, then top with avocado, tomato, cheese, salsa, etc!
