Caramelized Bananas and Yogurt

Greek yogurt makes a great night-time dessert or snack due to casein, a slow-digesting protein!

Serves: 2

Prep Time: 5 min | Cook Time: 5 min | Total Time: 10 min

Ingredients

  • 1 large banana, liced
  • 1/2 tbs coconut oil
  • dash of cinnamon
  • 1.5 cups greek yogurt
  • 3/4 tsp vanilla extract
  • stevia, to taste

Instructions

  1. In a small pan over medium heat, saute bananas in coconut oil.
  2. Season with cinnamon and cook until golden brown.
  3. Meanwhile, mix greek yogurt with vanilla and stevia.
  4. Spoon into two small bowls or parfait glasses and top with warm, caramelized bananas.
  5. Optional: top with cacao nibs, almond butter or crushed nuts!
