Healthy Chocolate Chip Banana Muffins

Ingredients

  • 3 tbsp coconut oil, melted
  • 2 bananas, mashed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup unsweetened almond milk*
  • 1/4 cup coconut or brown sugar
  • 1 1/2 cups oat flour**
  • 1/2 cup quick oats***
  • 1/4 cup ground flaxseeds
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup mini dark chocolate chips
  • 1/3 cup vanilla protein powder (email us for our recommendation)

Instructions

  1. Preheat oven to 350 degrees and line a muffin pan with liners or grease well with coconut oil.
  2. In a large bowl, combine bananas, melted coconut oil, almond milk, eggs and vanilla extract.
  3. In a medium bowl, combine remaining ingredients except for chocolate chips and mix well. Pour these dry ingredients into your wet ingredients and stir until combined.
  4. Fold in chocolate chips and pour batter into prepared pan.
  5. Bake for 20-25 minutes or until a toothpick comes out clean.

Notes

*reduce milk to 1/2 cup if not using protein powder
** blend regular, old fashioned oats in a blender until a flour is formed. Measure after blending.
*** not old fashioned oats, these are the “quick cook oats” you can find by the prepackaged packets of oatmeal at the grocery store.
