Protein Rice Krispies
Makes 12 servings
- 5 cups crispy rice cereal
- 1 cup vanilla protein powder (we used Formulx)
- 1 cup peanut flour OR 1/2 cup peanut butter
- 3/4 cup unsweetened almond milk*
- 1/3 cup Truvia
- 1/2 tsp salt
- 2 oz dark chocolate
*depending on the protein powder you use, you may need more or less milk. We suggest just adding a little at a time until you reach the desired consistency.
In a large bowl, mix all ingredients except the chocolate together until all cereal is coated, and everything is well combined. Line a 9 x 13″ baking pan with parchment paper, and spread the mixture out into your pan. Melt your dark chocolate and spread over the top. Place in freezer for 3-4 hours or until harden and slice into 12 squares. Place back into the freezer and remove a few minutes before eating. Enjoy!
