 Protein French Toast

Makes 5 servings

  • 10 slices low calorie whole wheat bread (we used Nature’s Own 100% Whole Wheat which has 50 calories per slice)
  • 1 egg
  • 5 egg whites
  • 1/2 cup unsweetened almond milk
  • 1/4 cup protein powder (we used Trutein Cinnabun – AMAZING!)
  • 3 packets of stevia
  • 3/4 tsp vanilla extract
  • 1/2 tsp cinnamon

Preheat a large skillet on medium-low heat and spray with non-stick cooking spray. In a large bowl, whisk egg and egg whites together. Add all other ingredients and whisk until thoroughly combined. Dip slices of bread into your egg mixture and cook on until golden brown on both sides, flipping halfway through. Top with fruit, peanut butter, sugar-free syrup, homemade jelly or whatever your heart desires. Enjoy!
