Easy Veggie Stir Fry
Serves: 3
Ingredients
- 1 red bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 1 yellow zucchini, chopped
- 1 green zucchini, chopped
- 1-2 cups chinese broccoli (or regular broccoli)
- 1-2 cloves garlic, diced
- 1″ piece of ginger, diced
- 1/3 cup soy sauce
Instructions
- In a cast iron skillet or non-stick wok, cook sliced bell pepper, ginger, and garlic in soy sauce over medium heat for 2-3 minutes
- Add in zucchini and cook for an additional 2-3 minutes
- Lastly, add in broccoli and cover until broccoli is soft.
- Optional: serve with brown rice or steamed potatoes
