Fire Roasted Tomato Chicken Soup
Makes 10 large servings
Ingredients
- 1 large onion- chopped
- 3 cloves of garlic- diced
- 1 stalk of celery- diced
- 2 cups mushrooms – chopped
- 1 tbs extra virgin olive oil
- 2 12.5 oz cans of chicken breast packed in water (or 20 oz of shredded chicken breast)
- 2 14.5 oz of fire roasted tomatoes
- 1 6oz can of tomato paste
- 48 oz low sodium chicken broth
- salt and pepper to taste
In a large pot, add the first 6 ingredients and sauté on medium heat for 5 minutes. Then add the chicken, tomatoes, tomato paste, and chicken stock. Cover and cook on low heat for at least 2 hours.
