Zesty Quinoa Salad
Serves: 4
Ingredients
- 1.5 cups quinoa, uncooked
- 2 tomatoes, chopped
- 1 yellow bell pepper, chopped
- 1-2 cups mixed baby greens
- 2 tbs olive oil
- 1-2 cloves garlic or 1 tsp garlic powder
- 1/2 lemon, juiced
- salt & pepper, to taste
Instructions
- Cook quinoa according to package, but add in bell pepper while the quinoa cooks.
- Once quinoa is done cooking and still warm add in remaining ingredients and mix well.
- Refrigerate for 2-4 hours or overnight until chilled before serving.
