Zesty Quinoa Salad

Serves: 4

Ingredients

  • 1.5 cups quinoa, uncooked
  • 2 tomatoes, chopped
  • 1 yellow bell pepper, chopped
  • 1-2 cups mixed baby greens
  • 2 tbs olive oil
  • 1-2 cloves garlic or 1 tsp garlic powder
  • 1/2 lemon, juiced
  • salt & pepper, to taste

Instructions

  1. Cook quinoa according to package, but add in bell pepper while the quinoa cooks.
  2. Once quinoa is done cooking and still warm add in remaining ingredients and mix well.
  3. Refrigerate for 2-4 hours or overnight until chilled before serving.
