Oatmeal Raisin Cookies

Ingredients
- 1 egg
- 2 tbs butter, melted
- 1/2 cup baking stevia or sweetener that measures like sugar
- 1/2 cup cashew or almond flour
- 1/4 cup protein powder (we use Trutein Cinnabun)
- 1 tsp vanilla extract
- 1/4 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 1.5 cups old fashioned oats
- 1/2 cup raisins
Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- In a medium bowl, beat egg well then add melted butter and stevia, mixing well.
- Add in flour, protein powder, vanilla, salt, baking soda and baking powder, and mix until smooth.
- Fold in oats and raisins, then drop by rounded tablespoons onto your prepared pan.
- Bake for 8-10 minutes or until golden. Enjoy!
