Oatmeal Raisin Cookies

Yields: 24

Prep Time: 10 min | Cook Time: 10 min | Total Time: 20 min

Ingredients

  • 1 egg
  • 2 tbs butter, melted
  • 1/2 cup baking stevia or sweetener that measures like sugar
  • 1/2 cup cashew or almond flour
  • 1/4 cup protein powder (we use Trutein Cinnabun)
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1.5 cups old fashioned oats
  • 1/2 cup raisins

Instructions

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a medium bowl, beat egg well then add melted butter and stevia, mixing well.
  3. Add in flour, protein powder, vanilla, salt, baking soda and baking powder, and mix until smooth.
  4. Fold in oats and raisins, then drop by rounded tablespoons onto your prepared pan.
  5. Bake for 8-10 minutes or until golden. Enjoy!
