Peanut Butter Brownie Protein Bars
For the chocolate layer
- 2/3 cup oat flour
- 1 scoop protein powder (we used Trutein Chocolate Peanut Butter Cup)
- 3 tbsp unsweetened cocoa powder (we used Hersheys Special Dark)
- 1/2 cup liquid egg substitute
- 1/4 cup water or milk of choice
- 1/4 cup baking stevia
- 1/2 tsp vanilla
- 1/2 tsp baking powder
- 1/2 tsp apple cider vinegar
For the peanut butter layer
- 1/3 cup oat flour
- 1/4 cup peanut butter
- 1 tbs vanilla protein powder
- 1/4 cup liquid egg substitute
- 1/4 cup water or milk of choice
- 1/4 cup baking stevia
- 1/2 tsp vanilla
- 1/2 tsp baking powder
- 1/2 tsp apple cider vinegar
Preheat oven to 350 degrees and spray an 8 x 8 baking dish with non-stick spray. In a medium bowl, combine all ingredients for the chocolate layer and beat well with a mixer. Pour into your pan and bake for 8 minutes. While the chocolate layer is baking, combine peanut butter, egg, stevia, and vanilla and beat well. Slowly add your dry ingredients and water, and beat until well combined. Remove chocolate layer from the oven, and pour peanut butter batter over the top. Place pan back into the oven for another 6-8 minutes or until a toothpick comes out clean. Enjoy!
