Skinny Lemon Bars

Serves: 12

Prep Time: 10 min | Cook Time: 45 min | Total Time: 55 min

Ingredients

For the crust:

  • 1 cup graham cracker crumbs
  • 2 tbs melted unsalted butter or coconut oil
  • 1-2 tbs unsweetened almond milk
  • 2 tbs baking stevia or sweetener that measures like sugar

For the lemon filling:

  • 2 eggs
  • 1 (14 oz) can sweetened condensed milk
  • juice and rind from 2 lemons
  • 1/4 cup baking stevia or sweetener that measures like sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350 degrees and line a 9 x 9 pan with parchment paper (or spray well with nonstick spray)
  2. In a medium bowl, mix ingredients for crust then press into the bottom of your prepared pan
  3. In another bowl, beat eggs well then add all other ingredients and mix until smooth.
  4. Pour batter into prepared pan and bake for 45-50 minutes or until center is firm
  5. Let cool and refrigerate for 3-4 hours before serving
