Skinny Snickerdoodles

Yields: 12

Ingredients

  • 1/2 cup oat flour
  • 1/2 cup protein powder
  • 1/4 cup cashew or almond flour
  • 1 egg
  • 2 tbs melted unsalted butter or coconut oil
  • 1/2 cup baking stevia
  • 1/4 tsp baking soda
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1/4 tsp cinnamon

For the cinnamon sugar topping:
1/2 tsp cinnamon
3 tbs baking stevia or sugar (we used Truvia)

Instructions

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper or spray well with nonstick spray.
  2. In a medium bowl, beat egg, butter, vanilla and stevia until smooth.
  3. In another bowl, combine remaining dry ingredients.
  4. Slowly add the dry ingredients into the wet ingredients and mix by hand until thoroughly combined.
  5. Drop cookies by rounded tablespoons onto your prepared pan.
  6. Mix cinnamon and Truvia/sugar together and sprinkle on top of each cookie.
  7. Bake for 8-10 minutes or until golden.
