Skinny Snickerdoodles

Ingredients
- 1/2 cup oat flour
- 1/2 cup protein powder
- 1/4 cup cashew or almond flour
- 1 egg
- 2 tbs melted unsalted butter or coconut oil
- 1/2 cup baking stevia
- 1/4 tsp baking soda
- 2 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla
- 1/4 tsp cinnamon
For the cinnamon sugar topping:
1/2 tsp cinnamon
3 tbs baking stevia or sugar (we used Truvia)
Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper or spray well with nonstick spray.
- In a medium bowl, beat egg, butter, vanilla and stevia until smooth.
- In another bowl, combine remaining dry ingredients.
- Slowly add the dry ingredients into the wet ingredients and mix by hand until thoroughly combined.
- Drop cookies by rounded tablespoons onto your prepared pan.
- Mix cinnamon and Truvia/sugar together and sprinkle on top of each cookie.
- Bake for 8-10 minutes or until golden.
