Cauliflower Protein Pancakes
Makes about 6 pancakes
- 1 cup steamed cauliflower
- 1/4 cup protein powder (we used Trutein Cinnabun)
- 3 egg whites or 1/2 cup liquid egg whites
- 1/4 cup unsweetened almond milk
- 2 packets of stevia
- 1/4 tsp vanilla extract
- 1/4 tsp baking powder
Preheat a large nonstick skillet over medium-low heat. Place all ingredients in a blender and blend until smooth. Pour batter into pan and cook until golden brown, flipping half way through. We topped ours with Cinnabun frosting (2 tbs Trutein Cinnabun, 1 tbs Greek Yogurt and 2 tbs of sugar-free syrup).
