Veggie Roast

Ingredients
- 3 zucchinis, sliced in half & chopped
- 3 cups baby carrots
- 4 cups bell peppers, sliced
- 4-5 baby potatoes, chopped
- 1/2 large onion, sliced & separated
- 2-3 tbs olive oil or other oil of choice
- 3-4 cloves of garlic, diced
- 1-2 tsp rosemary
- salt & pepper, to taste
Instructions
- Preheat oven to 425 degrees.
- Place all veggies in a large 9 x 13 pan (or roasting pan) and drizzle with olive oil.
- Add in garlic, rosemary, salt & pepper.
- Mix together well and place in the oven for 40-50 minutes stirring occasionally while cooking.
